Why I hate Rice Pudding

           The Year I turned four I was sent to daycare. It was in a pretty little house in a small town. The house was sky blue with white gables. It reflected well its name: Papillon Bleu, the blue butterfly. I loved going there and I was always disappointed when my dad pulled up in the driveway to bring me home. I had many friends there and we used to play on the hill in the backyard. My favorite part of the day was mealtime. The daycare had a wonderful cook who used to make us home made lunch everyday. Every mealtime included a sweet and tasty dessert. As a child, I had a big appetite and I used to always ask for seconds. I loved every kind of food. I was not a picky eater.

          I remember one day, after lunch, we had our scheduled dessert but this time it was something that I could not eat. I looked at it over the rim of the bowl with disgust plainly on written on my face. The gooey white mush that was in front of me was not only full of chunks but also piping hot. What others might call a creamy smooth rice pudding; I called a goopy, gunky, stomach churning mash. For the first time that I can remember, I refused to finish my meal. Now this did not please the daycare worker. It seems that she felt the need to force feed me this dessert whether I liked it or not.
           I do not understand her reasoning to this day. I can understand an adult coaxing and pleading a child to eat his or her veggies or to finish a glass of milk, but a dessert? As she was forcing the spoon in my mouth, I was begging and crying for her to stop. She did not. The result? I vomited all over her and the floor as soon as that disgusting substance invaded my mouth. It was not the taste that repulsed me, It was the consistency. As expected, she was not pleased but could not reprimand me since I warned her beforehand and did not do it on purpose. 

           This ordeal may seem like a trivial anecdote in a person's life but this greatly affected my future eating habits. To this day, I cannot stand rice pudding. I can't stand any pudding as a matter of fact. I can't even smell the odour of creamy vanilla flavoured foods. I especially can't put anything in my mouth that resembles the texture of pudding. Now, you may think that this does not limit very much my choices but you are mistaken. Apart from the obvious pudding, I still can't stomach oatmeal. The texture and temperature makes it a perfect twin to the feared rice pudding. Even cereal is out of bounds once it absorbs too much milk. Another food item that makes me gag is yogurt. To clarify, I used to love all these aliments before the incident but now they are taboo. My life may have been much different if it were not for the evilness of a daycare worker and the silminess of sweetened rice.

It's Snowing!

We thought Winter was over and Spring was in the air. 
Were we ever wrong! Snow came tumbling down and we had to switch back to boots :(


Ischl Tarts




For these cookie sandwiches, there are 2 doughs. The bottom cookie is a spiced dough and the top is a normal sugar cookie dough.


Ingredients: 
1 cup butter
1 cup powdered sugar
2 egg yolks
2 tsp pure vanilla extract
1/4 tsp ground cinnamon
1/4 tsp salt
1/8 tsp ground cloves
2-1/4 cup all purpose flour
Jam


Spiced Dough


In a small saucepan, melt 1/2 cup of butter over medium heat until butter turns light brown (about 12 minutes). Remove from heat and poor into a medium mixing bowl.
Chill until butter solidifies (45 min)
Then, beat the chilled butter with an electric mixer for 30sec. 
Add 1/2 cup powdered sugar + 1 egg yolk + 1 tsp Vanilla + Cinnamon + ground cloves + 1/8 tsp salt.
Beat until combined and then add 1 cup of the flour and mix until combined.
Cover dough and chill for 1 hour.


Plain Dough


Meanwhile, beat 1/2 room temperature dough with an electric mixer for 30sec.
Add remaining 1/2 cup powdered sugar + 1 egg yolk + 1 tsp vanilla + 1/8 tsp salt.
Beat until combined and add 1-1/4 cup of remaining flour and beat in until combined.
Cover dough and chill 1 hour.




Preheat oven to 375 degrees F.
Roll each dough to 1/8 inch thickness on a lightly floured surface.
Cut out shapes with a cookie cutter and for the Plain Dough, Cut out 1/2 inch shapes in the cookie (So you will be able to see the jam once you assemble the cookies). 
Do not cutout those shapes in the spiced dough.


Place the cutouts on cookies sheet about 1 inch apart.
Bake about 8 minutes and transfer to a wire rack to cool completely.
Spread about 1 tsp of jam on the bottom of each Spiced cookie and top with plain cookie. 
Sift powdered sugar on cookies before serving.

Mouahaha!!

I don't really like Halloween... Especially the dressing up part. Call me boring but I will only dress up when someone makes me (and then I'm not happy about it.) 

But I guess I must write something to acknowledge the season so here we go.

















This week I made a buttery vanilla cake which takes merely 10 minutes to whip up and is extremely easy to make. Anyone can make it! I'm not exactly sure where the recipe came from. 

Lazy Daisy Cake:

Ingredients:
2 eggs
1 tsp Vanilla
1 cup granulated sugar
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
4 tbsp butter
3 tbsp brown sugar
2 tbsp cream
1/2 cup of either shredded coconut or any coarsely chopped nut.

Beat the eggs and vanilla until frothy and light (About 30 seconds)
Gradually add the granulated sugar and mix
In a separate bowl, mix the flour, baking powder and salt.
Then add the dry ingredients to the egg and sugar mixture.
In the microwave, heat the milk and 1 tbsp of butter. (Now you must be fast) Add that to the egg mixture and poor it in an 8" pan. You must do this step quickly because the warm milk will react with the baking powder and we want it to start baking as quickly as possible.

Bake for 25 minutes at 350°F

Meanwhile... 
In a small saucepan, heat 3 tbsp of butter, brown sugar, cream and the 1/2 cup of coconut (or nuts)
Heat until everything melts (Takes only a couple of minutes)

When the cake is done, pull it our of the oven and pour melted butter + sugar mixture on the top of the cake.
Broil the cake and keep a very close eye on it because it will burn easily. Broil until the top becomes a nice golden brown (Takes seconds)

And this is what you get! It looks really simple and not that delicious looking but I assure you its really good and buttery. It's my favorite cake to eat when I'm in a hurry and I just want some sweetness.
